This was our first time preparing venison at all, and as it was for a Dinner Party we wanted to make a good impression. Let’s just say – the venison delivered in spades. We had ordered the largest (6lb) size which was easily enough for 6 with a good size portion for 4 left over for another day. The roast venison made for a magnificent substitute for beef with a strong but not overpowering flavour – and of course the gravy was delicious. Later, the left over slices made for a generous stroganoff a couple of days later which again had excellent depth and taste.
We will definitely be buying again!

I ordered the biggest joint, hung it for some additional days, marinaded it in port, red wine and spices and we had it for Christmas lunch. The flavour’s amazing!! There’s only 2 of us but we always buy the biggest available as it’s so much easier to get a rare joint and it’s very versatile.
The first half of the joint was tender – carving it was like going through butter – but the second half was full of sinew? which made it quite difficult to slice and impossible to chew so it’s going to be made into stews/goulash/curry.
