Macbeth’s rolled wild roe saddle is the prime roasting joint. It has a gamey flavour which is milder than some other roe cuts and it just melts in the mouth. Best cooked rare to realise the full flavour and succulence of this fantastic roasting cut.  Rolled roe saddle is ideal for small gatherings and we find is best cooked rare to medium rare. All of our roe is wild and sourced from local estates.
