This is a very popular cut of yester year! Macbeth’s rolled brisket is a great slow cooking stewing roast due to the amount of flavour that it has. When cooked slowly and moistly, the brisket releases the most wonderful flavours with a texture to die for.

Rub salt black pepper and add crushed garlic to.the meat Roast slowly for 2 hrs gas mark 4.Serve with roast potatoes, runner beans, mashed swede, roast parsnips and gravy

I think this is one of the best tasting joints of beef ever, I cooked it really slow in the slow cooker with half a tin of Guinness and a beef stock pot, the meat just melts in your mouth and the gravy is to die for, excellent quality.

Purchased around £200 pounds worth of assorted meats in December, which I can only describe as the dogs bits every piece has been excellent, this includes silverside, brisket, stew pack, rolled pork loin, rolled leg of lamb duck breasts cooked the Gordon ramsey way {yummy}, free range chicken at 18 quid sounds expensive but you will not taste better ps boil up remains and turn in carton top quality chicken stock for later meals ahh forgot to mention the venison tastes wonderful.
Now going to prepare another shopping list try something new as well this time.

I unrolled the 5 lb rolled brisket and slow cooked it at 110 degrees for 18 hours. It was simply delicious, most tender with a wonderful taste. You have prepared the roast with great care and trimmed it of most fat, for my cooking method I would have preferred if the top (external) fat would have been left on the roast, to give some more juiciness and extra flavour. But a great meal anyway.

Did a very slow pot roast(5 hours) with lots of rosemary and thyme,carrots and shallots. Family said it was the best piece of beef they had ever tasted,I have to agree, it was sensational.Well done Macbeth’s.
