Purchased from local estates, our Mallard (wild duck) has quite a strong gamey flavour. It is great as part of a roast dinner and is certainly a little bit different.

25 min per lb or 55 min per kg at 180oC, 350oF or gas 4-5

Pre- heat oven to gas mark 8. Take 3 oranges and squese them and reserve the juice in a glass. Stuff the duck with the orange skinds Season the duck with garlic salt,black pepper and salt. Place the duck in a roasting tin. Cook in the oven between 45mins to 1 hr.For the orange juice Pour into a frying, add half a table soon of plain flower. Stir.Pour over duck and serve with cabbage, carrots and runner beans. Scrumpshes
