Rolled sirloin in our humble opinion strikes exactly the right compromise between taste and tenderness. This sirloin has a good level of marbling and fat cover through it so when cooked rare you will get a rich beefy flavour and it will just melt in the mouth.

Cooked to medium rare sous vide the flavour was lovely. Unfortunately the joint fell well short of of its description of ‘melt in the mouth’.We selected this for Xmas dinner and were disappointed. Rather embarrassing really as we has three guests. At least the accompanying wine was superb.
