This was a superb chicken, simply roasted and, although I’d made a sauce with it, I couldn’t bring myself to spoil the flavour of the chicken itself.
Tastes like chicken used to taste!

Excellent chicken again! Stuffed it with sage forcemeat stuffing, to keep it moist during the cooking, then cooked it on the rotisary in the oven – creates great crispy skin all over, and all those meat juices to drip over the roasting vegetables!
